Gingerbread Cookie Bars

These Gingerbread Cookie Bars are a classic, dark gingerbread, loaded with molasses, ginger, and nutmeg; all the spicy-sweet flavor you want!

Ingredients

  • 1 stick softened butter
  • ½ cup sugar
  • cup brown sugar
  • 1 tsp vanilla
  • cup molasses
  • 2 tsp baking soda
  • 2 cups flour
  • 1 egg
  • 1 tsp ginger
  • 1 tsp nutmeg
  • sprinkles

  • Icing

  • 1 cup powdered sugar
  • 1 tbsp milk
  • Green and/or red food coloring

Instructions

  • Using a stand or hand mixer, mix together butter, sugars, and vanilla until creamy. Add molasses, egg, flour, baking soda, ginger, and nutmeg. Blend with hand mixer on medium speed until fully incorporated.
  • Spray a square baking dish with nonstick, and spread batter in an even layer all over it. Bake for 20 minutes at 350 degrees F. Cool 15 minutes before adding icing.
  • To make icing, blend milk and powdered sugar together, along with food coloring. Drizzle all over your bars, and add sprinkles.
  • Cut into squares and serve.
