- ½ cup coconut oil
- ½ cup maple syrup
- ¼ cup brown sugar
- 3 Tablespoons cocoa powder
- 2 cups oats
- 1 cup sliced almonds
- 1 teaspoon vanilla
- ¼ teaspoon salt
- 1 cup of freeze dried strawberries
- 3 Tablespoons mini chocolate chips
- 1/3 cup white chocolate chips
In a pot, heat sugar, oil and syrup until sugar dissolves and mixture starts to bubble. Turn off stove and remove from heat.
In a separate bowl add oats, almonds, cocoa powder and salt. Add sugar and oil mixture and vanilla.
Stir to coat and pour onto a baking sheet lined with parchment paper. Bake at 275°F for 40-45 minutes, stirring every 10-15 minutes.
Set tray on the counter and sprinkle with milk chocolate chips and stir to melt into the granola. Sprinkle with white chocolate chips let sit and melt for 3-4 minutes and gently stir. Allow to cool and add strawberries.
Note: You can let the granola cool completely before adding chocolate if you don’t want it melted throughout.
