St. Paddy’s Day is going to be a little subdued this year, with so many parades being canceled on account of scary germs. But luckily, there’s nothing to stop us from celebrating it on our own. We can dress up in our greenest finery, serve our favorite Irish foods, and put shamrocks and rainbows on everything. Especially our lunchboxes!

Shamrock Tortilla Chips with Cheese Dip.
This lunchbox is based on my EASY Homemade Tortilla Chips, made from green spinach wraps cut into shamrock shapes. Pair them with cheese dip and a colorful assortment of green broccoli and orange pepper strips. For dessert, add my St. Patrick’s Day Chocolate Dipped Oreos and a couple of Hershey Gold Nuggets, just like leprechauns have (what, you thought it was real gold)?
Rice Cake Rainbow Pizza
Leprechauns love rainbows, so they’d love this rainbow “pizza” made from multi-colored fruits. Your kids will love to assemble their own, complete with a side of yogurt-marshmallow dip. Add some cute cheddar cheese bites cut into mushroom and flower shapes, plus a rainbow assortment of Skittles.
Build Your Own Leprechaun
Assemble this cute little guy from a toasted, buttered English muffin with an assortment of “hats” cut from spinach tortillas, “beards” made of sliced cheddar, and half-circle olive “eyes.” Serve him with leprechauns’ favorite things: rainbows (colorful fruits and veggies on a skewer) and “gold coin” cookies.
Yet another rainbow lunch, this one with a green salad topped with all the same colorful fruits and veggies as the rainbow skewer. Add a side of popcorn mixed with Lucky Charms and a couple of “gold” Ferrero Rocher chocolates.

- 1/2 cup Strawberries
- 1/2 cup Halo oranges
- 1/2 cup Pineapple
- 1/2 cup green grapes
- 1/2 cup Blueberries
- 1/2 cup Purple grapes
- 1/2 cup vanilla yogurt
- ½ cup marshmallow fluff
- 2 oz Cheese
- 4 rice cakes
- Place ingredients into lunchbox and refrigerant. Use within 1-2 days.
