Baked Potato Lunchbox Idea

This baked potato lunchbox idea is the perfect addition to your weekly rotation of school lunches and quick lunch ideas.

Ingredients

  • 4 baked potatoes
  • 1 cup of shredded cheese
  • 6 slices of bacon cooked
  • ½ cup of sour cream
  • 2 cups Steamed vegetables

Instructions

  • Scrub your potatoes and pierce them with a fork, several times. Wrap them in aluminum foil and bake at 400 degrees for 45-60 minutes. You could also do it in a crock pot: https://www.familyfreshmeals.com/2013/01/crockpot-baked-potatoes.html
  • At the end of your cook time for your potatoes, cook your bacon and steam your vegetables.
  • Shred your cheese. Shredded cheese from a block melts better than cheese from a bag since that will have extra preservatives in it.
  • Create your lunchbox. I placed my sour cream in a small container and the cheese in the small side compartment. I didn’t want it to melt next to the warm potato till I was ready to eat. That is why I placed my bacon around the potato. The vegetables went into the large side compartment. Heat and enjoy.
