- 1 pound ground pork sausage
- 1 cup diced yellow onion
- 1 cup diced green bell pepper
- 1 cup diced celery about 2-3 stalks
- Salt and pepper to taste
- 2 teaspoons Cajun seasoning
- 1 ½ cups long-grain rice
- 2-3 sprigs fresh thyme plus more for garnish
- 2 teaspoons beef bouillon
- 3 cups water
- Chopped parsley for garnish
Cook the ground sausage in a large skillet over medium heat, breaking it into small pieces as it cooks. Sauté for 3-4 minutes, until the sausage is mostly cooked but still slightly pink.
Add the diced onion, green bell pepper, and celery. Continue cooking until the onion and celery are softened and the sausage is cooked through.
Add salt and pepper to taste, Cajun seasoning, rice, beef bouillon, water, and thyme sprigs. Stir to combine.
Bring the mixture to a boil. Reduce the heat to a simmer, cover, and cook for 20 minutes.
Remove the skillet from the heat and let the rice sit, covered, for 3-4 minutes.
Remove the thyme sprigs. Fluff the rice with a fork and stir gently.
Garnish with chopped parsley and additional fresh thyme before serving.
