Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion chopped
  • 3 medium carrots peeled and diced
  • 1 cup frozen peas
  • 16 ounce package potato gnocchi
  • ¼ cup ketchup
  • ¼ cup water or beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Bring a large pot of salted water to a boil. Cook the gnocchi according to the package directions. Once the gnocchi float to the surface and are tender, drain well and set aside.
  • While the gnocchi cook, add the ground beef, chopped onion, and diced carrots to a large skillet over medium-high heat. Cook for 8–10 minutes, breaking the beef into crumbles, until the beef is fully browned and the onion and carrots have softened. Drain any excess grease from the skillet.

Notes

How to Store and Reheat Leftovers

Refrigerator: Allow leftovers to cool before transferring them to an airtight container. Refrigerate for up to 4 days.
Reheating: Warm leftovers in a skillet over medium-low heat, stirring occasionally until heated through. Add a splash of beef broth or water if the sauce has thickened. You can also reheat individual servings in the microwave.
Freezing:For the best texture, freeze just the cooked beef and vegetable mixture for up to 3 months. Thaw overnight in the refrigerator, reheat thoroughly, and prepare fresh gnocchi to stir in before serving.
Cut the carrots into small pieces. This helps them soften during the short cooking time.
Don't overcook the gnocchi. Cook just until tender according to the package instructions. They'll cook a little more when added to the skillet.
