Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cinnamon
  • 1 lemon thinly sliced
  • 3/4 cup sliced kalamata olives pitted
  • 1/2 red onion thinly sliced
  • Chopped fresh parsley and crumbled feta cheese for garnish optional

Instructions

  • Preheat oven to 400°F. In a large bowl, combine olive oil, garlic, lemon juice, lemon zest, oregano, thyme, paprika, salt, pepper, and cinnamon.

  • Add chicken thighs to the bowl and toss to coat with the marinade. For best flavor, let marinate for 30 minutes, or refrigerate for up to 4 hours.

  • Arrange chicken thighs in a single layer in a large baking dish. Spread them out slightly for even cooking.

  • Scatter lemon slices, kalamata olives, and red onion around and under the chicken.

  • Bake uncovered for 20–25 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F. Optional: For a lightly golden top, broil for the last 2-3 minutes, watching carefully to prevent burning.

  • Remove from oven and let rest for 5 minutes. Garnish with fresh parsley and crumbled feta cheese before serving, if desired.

Notes

How to Store Greek Chicken Thighs

Refrigerator: Store leftover Greek Chicken Thighs in an airtight container in the refrigerator for up to 3 days.
To reheat: Warm in a 350°F oven until heated through, or microwave individual portions in short intervals.
To freeze: Allow the chicken to cool completely, then freeze the chicken with some of the pan juices in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
