Crockpot French Onion Chicken
This Crockpot French Onion Chicken has all the flavor of a good French onion soup, but it's combined with chicken breasts to make a more filling meal.

- 2 pounds about 3 large sweet onions sliced into rings
- 2 cups beef broth
- ¼ cup dry red wine or red cooking wine
- 3 large chicken breasts sliced in half lengthwise to make 6 thin breasts (about 1 ½ pounds)
- ½ t dried thyme
- ½ t salt
- ½ t pepper
- 4 oz freshly shredded gruyere cheese
Place sliced onions in the bottom of the slow cooker.
Add beef broth and wine and stir to combine
Season chicken breasts with thyme, salt, and pepper.
Place the chicken in a single layer on top of the onions
Cook on low for 6 hours or on high for 3 hours
When the time is up top the chicken with freshly shredded cheese and place the lid back on the slow cooker. Allow about 30 minutes for the cheese to melt.
*For a more budget friendly option, swiss cheese can be used in place of gruyere. The taste will be very similar
*Slicing the chicken into serving sizes before you cook rather than after helps to make sure that each serving has the right amount of flavor and seasoning.
