- 28 oz bag frozen potatoes with onions and peppers
- 2 cup shredded sharp cheddar cheese
- 1.5 cup cooked ham diced
- 6 slices of bacon cooked and diced
- 1/4 cup finely sliced green onions
- 9 eggs beaten
- 2 12oz cans evaporated milk
- 1/4 tsp garlic powder
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt
Preheat oven to 350 degrees F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Arrange potatoes evenly in the bottom of the prepared dish. Sprinkle with your cheese, ham, bacon and green onions.
In a medium bowl, mix the eggs, evaporated milk, garlic powder, pepper, and salt. Pour the egg mixture over the potato mixture in the dish.
If you are baking right away, bake for 45 minutes, or until a toothpick inserted into the center comes out clean. Let rest for 5 minutes before serving
For overnight bake: Cover and refrigerate overnight. Bake at 350 degrees F for 1 hour.
