Farmer's Breakfast Casserole

Ingredients

  • 28 oz bag frozen potatoes with onions and peppers
  • 2 cup shredded sharp cheddar cheese
  • 1.5 cup cooked ham diced
  • 6 slices of bacon cooked and diced
  • 1/4 cup finely sliced green onions
  • 9 eggs beaten
  • 2 12oz cans evaporated milk
  • 1/4 tsp garlic powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt

Instructions

  • Preheat oven to 350 degrees F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Arrange potatoes evenly in the bottom of the prepared dish. Sprinkle with your cheese, ham, bacon and green onions.
  • In a medium bowl, mix the eggs, evaporated milk, garlic powder, pepper, and salt. Pour the egg mixture over the potato mixture in the dish.
  • If you are baking right away, bake for 45 minutes, or until a toothpick inserted into the center comes out clean. Let rest for 5 minutes before serving
  • For overnight bake: Cover and refrigerate overnight. Bake at 350 degrees F for 1 hour.
