Farmer’s Breakfast Casserole
This Farmer’s Breakfast Casserole is the perfect way to start off that kind of day. It’s got all the ingredients of a hearty farmer’s breakfast — potatoes, cheese, ham, bacon, onions, and eggs — all baked in one pan, so it’s easy to slice up and serve to a crowd.
You can even set it up the night before, so all you need to do in the morning is pop it in the oven. Then eat up, and head out the door to face your day.
I don’t have any evaporated milk in my pantry. Can I use regular milk?
- Yes, three cups of regular milk can do the same job as the evaporated milk. But that’s a good way to run down your milk supply, so the canned stuff is handier if you have it.
This seems awfully rich. Is there any way to make it with less fat?
- There are a few ways to cut the fat a bit. You can use nonfat evaporated milk instead of regular, substitute Egg Beaters for the whole eggs, or use lean turkey bacon in place of the regular bacon. And you can cut the cheese down from two cups to a cup and a half without hurting the texture.
Is this dish gluten-free?
- Yes! Not a single thing in there contains gluten. Feel free to serve it to all your gluten-averse guests.
Farmer’s Breakfast Casserole
- Preheat oven to 350 degrees F. Spray 13×9-inch (3-quart) glass baking dish with cooking spray. Arrange potatoes evenly in the bottom of the prepared dish.
- Sprinkle with your cheese, ham, bacon and green onions.
- In a medium bowl, mix the eggs, evaporated milk, garlic powder, pepper, and salt. Pour the egg mixture over the potato mixture in the dish.
- If you are baking right away, bake for 45 minutes, or until a toothpick inserted into the center comes out clean. Let rest for 5 minutes before serving. For overnight bake: Cover and refrigerate overnight. Bake at 350 degrees F for 1 hour.

- 28 oz bag frozen potatoes with onions and peppers
- 2 cup shredded sharp cheddar cheese
- 1.5 cup cooked ham diced
- 6 slices of bacon cooked and diced
- 1/4 cup finely sliced green onions
- 9 eggs beaten
- 2 12oz cans evaporated milk
- 1/4 tsp garlic powder
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt
