- 2 lbs boneless skinless chicken breasts
- 21 oz cans cream of chicken soup
- 1 ½ cups sour cream
- ½ medium onion diced
- 3 garlic cloves minced
- 4 tablespoons butter
- 1 ½ cups Ritz crackers crumbled
- ¾ teaspoon Italian seasoning
- Fresh chopped parsley for topping
Place chicken breasts into the slow cooker.
Add cream of chicken soup, sour cream, onion, and garlic.
Cover with lid and cook on low for 5-6 hours or high for 4-5 hours, until chicken is cooked and tender.
In the last hour, remove chicken breasts and shred using two forks. Stir the sauce well and then add the shredded chicken back into the Crockpot and combine.
In a microwave safe bowl, melt the butter in the microwave.
In a mixing bowl, add the crumbled Ritz crackers and Italian seasoning. Pour the melted butter on top and stir well to combine.
Sprinkle the mixture over the chicken in the Crockpot. Cover and cook on high for the remaining hour.
Top with fresh chopped parsley and serve.
