Preheat your oven to 375°F and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream together the butter and sugar until light and fluffy, about 2-3 minutes.
Add the eggs and vanilla extract, mixing well.
Stir in the lemon zest and lemon juice until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together.
Use a 2-inch cookie scoop to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 8-10 minutes or until the bottoms of the cookies are lightly golden and the center is just set. Do not overcook.
While the cookies cool, make the glaze by whisking together the powdered sugar, lemon juice, and lemon zest in a small bowl.
Once the cookies have cooled slightly, drizzle the glaze over the top of each cookie and garnish with additional lemon zest, optional.
Allow the glaze to set for a few minutes before serving.
