  • 1 tablespoon rice vinegar
  • 1 tablespoon red chili paste
  • 1 teaspoon fresh grated ginger
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon maple syrup To finish
  • 1 tablespoon green onion
  • 2 teaspoons crushed peanuts

Instructions

  • Start by bringing a large pot of salted water to a boil. Cook your noodles according to the package instructions until they’re tender but not mushy. Drain them well and set aside while you make the sauce.

  • In a medium bowl, add the peanut butter, soy sauce, hot water, rice vinegar, chili paste, ginger, sesame oil, and maple syrup. Whisk everything together until smooth and creamy. At first it might look thick and a bit lumpy, but keep whisking and it will turn into a glossy, pourable sauce. If the sauce feels too stiff, add another spoonful of hot water and whisk again. You’re looking for something that flows easily but still coats the back of a spoon.

  • Add the cooked noodles to a large bowl. Pour the peanut sauce over the noodles and toss really well so everything gets coated evenly. Take your time here, because this is what makes the noodles shiny, saucy, and delicious.
