Have no fear – Family Fresh Meals is here to save the day! My new Avocado Egg Bake bites are a low-carb breakfast that’s definitely not boring. A tender, green avocado, halved and pitted…topped with sliced ham, egg, salt, and pepper…then baked until the egg is set. Between the salty, chewy ham, the firm egg, and the soft, slippery avocado, this gives you a great contrast of textures and flavors.

This breakfast has less than 2 grams of carbs, but it’s packed with protein, heart-healthy fats – and most of all, flavor. Put a plateful of these in front of you, and you definitely won’t miss that boring old bowl of cereal.

Avocado Egg Bake

Ingredients:
2 avocado, ripe
4 eggs
2 slice of ham, cut into 8 triangles
salt and pepper
garlic powder

Directions:

1. Preheat oven to 425 degrees. Cut avocado in half, remove pit and gently dab with a paper towel. Next, dab ham with paper towel to remove excess liquid.Avocado Egg Bites - Avocado sliced in half- Family Fresh Meals

Avocado Egg Bake

My new Avocado Egg Bake bites are a low-carb breakfast that’s definitely not boring. A green avocado, halved and pitted, topped with sliced ham and baked.

Cook Time 15 minutes
Total Time 25 minutes

Ingredients
 

  • 2 avocado ripe
  • 4 eggs
  • 2 slice of ham cut into 8 triangles
  • salt and pepper
  • garlic powder

Instructions

  • Preheat oven to 425 degrees. Cut avocado in half, remove pit and gently dab with a paper towel.
  • Next, dab ham with paper towel to remove excess liquid.

  • 4. Add egg to the middle of the avocado. Repeat the process. Sprinkle with salt, pepper and garlic powder and bake for 15 minutes or until egg is set.
