Asparagus Bacon Quiche

  1. Preheat oven to 400℉. Place pie crust in a pie pan. Cook empty pie crust for 10 minutes.
  2. Cut bacon into ½ inch pieces and place in frying pan. Cook on medium high for 8-10 minutes or until bacon reaches desired crispness. Drain bacon on paper towel.bacon cooking in a pan with a wooden spoon
  3. Pour grease off frying pan, reserving 1 tablespoon in the pan. Add onion, asparagus, and garlic to the pan and cook for 5-7 minutes or until asparagus is just starting to get tender. Set aside.onion, asparagus, and garlic added to pan
  4. Sprinkle ¾ cup shredded cheddar cheese on the bottom of the pie crust. Spread the asparagus mixture over the cheese.shredded cheese, onion, asparagus, and garlic added to pie crust
  5. In a small bowl, whisk together eggs, half and half cream, and pepper.eggs, half and half cream, and pepper in a mixing bowl

RECIPE TIPS

  • If you transfer a frozen pie crust to a pretty pie plate, it won’t be large enough to cover the edges of the pie plate. That is fine! The recipe will fill the frozen pie crust and not go over the edge. Precooking the pie crust ensures that the bottom of the quiche does not get soggy.
  • If you prefer to use cooked bacon crumbles from the store, saute the vegetables in 1 tablespoon oil instead of the bacon fat.

HOW SHOULD I STORE AND REHEAT THIS QUICHE?

  • If you are making this quiche ahead of time or storing any leftovers to be consumed a day or two later then make sure to cover the quiche or leftovers with foil over the quiche dish which you can store in the refrigerator for up to 3-4 days.
  • When it comes to reheating, remove the quiche from the fridge and place on the countertop while you preheat the oven. Then place the quiche while still covered with foil in the oven for 8-10 minutes or until warm throughout.
  • You can also freeze pre-baked quiche for up to 3 months. When you are ready to reheat it, remove from the freezer and set aside to thaw for an hour or for as long as is required before placing in the oven.

CAN ASPARAGUS AND BACON QUICHE BE MADE VEGETARIAN?

  • I don’t see why not?! Simply leave out the bacon and add ½-¾ of a teaspoon of salt to the eggs in step 3 above when you beat them to replace the saltiness that you would have got from the bacon.

DO I HAVE TO USE A STORE-BOUGHT PIE CRUST FOR THIS RECIPE?

  • No, of course not. I have used a store-bought pie crust for this recipe for convenience- it’s a great way to have a meal ready in a short space of time. With that said, there’s nothing stopping you from making homemade pie crust for this Asparagus Bacon Quiche!

    This was fantastic. I made a vegan shortcrust, which takes less than 5 minutes, and added some fresh chives too it. also added mushrooms. Great recipe for asparagus season. If I knew quiche was so easy I’d have been doing it for years!

    Love this recipe, I buy the pastry ready made but raw and I cook the bacon with the onion and garlic instead of the asparagus has a blanch the asparagus instead!!! Beautiful!
