The taste of summer.
When you’re a cook, summertime means summer fruit. Red cherries, ripe berries, cool melons…and the real stars of the summertime show, sweet, juicy peaches. They’re delicious in so many ways: fresh, sliced on cereal, blended into smoothies, and of course, baked into yummy desserts.
To celebrate peach season, I whipped up this little treat: Peach Crumble Bars. A crumble is like a crisp, but without the oats. The topping is just made from flour, sugar, and butter, all mixed together with a pastry cutter until it’s – you guessed it – crumbly. Just press a layer of this mixture into your pan to make the crust, then add a layer of sweetened, diced fruit, and sprinkle the rest of the crumbs on top.
The nice thing about this peach dessert is that you really don’t have to do anything to it. Peaches taste so fabulous on their own they don’t need cinnamon or anything fancy to bring out their flavor. All you need is a little splash of vanilla in the crumble mixture and a drizzle of powdered-sugar icing on top to make the bars extra sweet and moist.
Sweet, golden, and crumbly, these Peach Crumble Bars are basically the taste of summer in a pan. Enjoy it while you can.
Peach Crumble Bars
- Preheat oven to 350 degrees F. Line an 8”x 8” baking dish with parchment paper, set aside.
- In bowl add your flour, sugar, butter and vanilla and with pastry blender combine until crumbs form.
- Sprinkle about 2/3 of crumb mixture into bottom of crust and press down.
- In another bowl mix together peaches, sugar and cornstarch. Spread over crust.
- Sprinkle with remaining crust/topping (pea sized or bigger adds great crumble)Bake in oven for about 50-55 minutes until topping is slightly golden. Let cool, then chill for about 1 hour to set up.
- In bowl whisk together powdered sugar until you reach your desired consistency
- Drizzle over top of bars. Cut and serve your peach crumble bars.

- 2-3 Tbs sugar
- 2 tsp cornstarch
Icing
- 1/4 cup powdered sugar
- Splash of milk
