How to Make French Hollandaise Sauce
I’m going to let you in on an easy trick for turning plain cooked vegetables into gourmet food. All you have to do is top them with Hollandaise sauce. This is a classic with asparagus, but you can also use it on broccoli, artichokes, green beans, Brussels sprouts, or even spinach.
But creamy Hollandaise sauce isn’t just for veggies. It’s great on poached salmon or just about any kind of seafood. It can jazz up any kind of potatoes – boiled, baked, or fried. And, of course, it’s essential for Eggs Benedict, my brunch favorite!

Now, you might think a fancy sauce like this must be really complicated to make. But actually, it’s amazingly simple. All you need is five ingredients: egg yolks, lemon juice, melted butter, Dijon mustard, and a dash of hot sauce. And all you have to do with them is mix them up together in a blender. Blend everything but the butter first, then add the butter slowly in a thin stream, and like magic, this creamy, flavorful yellow sauce forms right before your eyes.
Whip this up when everything else is cooked, pour this creamy sauce over your food, and present your gourmet dish to the astonished crowd. No one but you has to know how easy it was.

Why does the melted butter need to be warm?
The hot butter will warm up the sauce, so it is ready to use right away.
You don’t heat the raw egg up at all?
This is why it is important to use hot butter. The friction created by the blender blades along with the hot butter will heat the egg while blending.
How far ahead of time can I make Hollandaise Sauce?
Since Hollandaise sauce uses raw egg yolks, you should use it quickly within about an hour.
What else can I use this Hollandaise sauce with?
Some of my favorite foods to use hollandaise sauce with are eggs Benedict, asparagus, broccoli, artichokes, green beans, Brussels sprouts, or even spinach.
How to Make Easy Blender Hollandaise Sauce
Ingredients you will need:
- egg yolks
- Dijon mustard
- fresh lemon juice
- hot sauce
- butter
- Place the egg yolks, mustard, lemon juice and hot pepper sauce in a blender Cover, and blend for about 10-15 seconds.
- Next set the blender on high speed, and slowly pour the 1/2 of your butter into the egg yolk mixture in a thin stream. Check and make sure mixture is smooth and combined and not separating. Continue adding in the rest of your butter.

Ingredients
- 4 egg yolks
- 1/4 teaspoon Dijon mustard
- 1 & 1/2 tablespoons fresh lemon juice
- 1/4 teaspoon hot sauce such as Franks (you can add more or less to taste)
- 1/2 cup butter melted (still warm)
Instructions
- Place the egg yolks, mustard, lemon juice and hot pepper sauce in a blender Cover, and blend for about 10-15 seconds.
- Next set the blender on high speed, and slowly pour the 1/2 of your butter into the egg yolk mixture in a thin stream. Make sure the butter is warm/hot.
