It’s the perfect meal to make on a busy weeknight or to prep ahead of time for a weekend gathering.
Recipe Notes:
- Use the right cheese: Use a good quality shredded cheese, such as cheddar or mozzarella, for the best flavor and texture.
- Add the cheese at the end: Wait until the last 15-20 minutes of cooking to add the shredded cheese to the top of the casserole. This will allow it to melt and get gooey without overcooking or burning.
- Cook on low heat: Cook the casserole on low heat for 6-8 hours or until the chicken is tender and the potatoes are cooked through. Avoid cooking on high heat, as this can cause the chicken to become tough and dry.
- Store leftovers in an airtight container in the refrigerator, for up to 3 days.
