Easy Shamrock Shake Cupcakes
Yes, I have been slightly obsessed with Shamrock Shakes this year. I apologize now if you are not a fan. (Are there really people out there who don’t love them?!)
These fun Shamrock Shake Cupcakes are SO EASY to make and totally taste like the beloved Shamrock Shake. So, if you are a fan of the minty goodness that the famous shake is known for, you are going to LOVE these cupcakes!

There are so many great ways to decorate the these Shamrock Shake Cupcakes. We used cute straws and Lucky Charms! Have fun with green food sprinkles or simply top with a cherry, just like they serve the Shamrock Shake! NOTE: If you are in a pinch and don’t have time to make the frosting, simply use a store bought tub of your favorite vanilla frosting!
Easy Shamrock Shake Cupcakes
****Cupcakes****
- 1 box vanilla cake mix and ingredients needed to prepare (eggs, oil, water, etc..) (I used Betty Crocker Vanilla Cake Mix)
- 2 tsp mint extract (NOT peppermint)
- green food coloring
- cupcake liners
****Frosting:****
- 2 sticks of butter, softened
- 2 teaspoons vanilla extract
- 1/4 cup whole milk
- 3 -4 cups confectioners sugar
- Optional: Lucky Charms or cherries or sprinkles for topping
- (if short on time, use 1 tub of store-bought vanilla frosting instead)
- Preheat oven according to cake mix package. Prepare cake mix according to box directions. Once batter is mixed, add in mint extract and green food coloring. Mix on medium until you achieve a light green “shamrock shake” color.
- Prepare 24 muffin tin cups with cupcake liners and divide batter evenly, filling each 2/3 the way full.
- Bake according to package (mine was at 325 degrees for 23 minutes since I used dark-nonstick muffin tins) Let cupcakes cools for at least 20-30 minutes before frosting
Tip: Cupcakes are done when you stick a toothpick into the center of a cupcake and it comes out dry. - While cupcakes are baking, prepare your frosting. If you are using a store bought tub of frosting to save on time, skip this step!
Using a mixer, beat butter, milk, vanilla extract until well combined. Turn mixer to low, and slowly add powdered sugar until desired frosting texture is achieved. Start with 3 cups and if you would like a thicker frosting, add the 4 cups of powdered sugar. Increase mixer speed to high and beat for about 30 seconds to 1 minute, until frosting is fluffy. - Frost cupcake with a frosting bag, or a ziplock bag with tip cup off, or a knife.
- Decorate with Lucky Charms, food sprinkles and or cherries.
