- 1 pound of sausage
- 3 cloves of garlic
- ½ red bell pepper
- 2 teaspoons taco seasoning
- 6 eggs
- 8 small tortillas
- 1 cup of shredded cheese
- Garnish: Salsa sour cream and chopped cilantro
Preheat oven to 400 degrees F. Cook sausage, add garlic, pepper and seasoning
Whisk eggs in a bowl, pour over sausage mixture and cook until eggs are cooked and scrambled.
Heat tortillas one at a time in a skillet over low heat or all tortillas in the microwave for 30 seconds.
Assemble tortillas, divide sausage and egg mixture evenly into each tortilla. Top each tortilla with cheese. Tightly roll the tortillas, place each tortilla seam side down into the prepared baking dish.
Bake for 10-15 minutes. Garnish & Enjoy!
