The idea of Mexican food for breakfast is nothing new. Breakfast burritos, loaded with eggs, cheese, and salsa, are basically a staple these days. They’re incredibly handy as a grab-and-go breakfast for busy mornings, especially because you can eat them with one hand.

In fact, breakfast burritos are so common now that I think people are starting to get a little tired of them. So when I was thinking about writing up my own recipe for a grab-and-go Mexican breakfast, I decided not to do burritos. Instead, I went for something even smaller and more convenient – taquitos!

These little baked roll-ups are kind of like egg rolls, with fillings stuffed inside a crispy outer shell. But since they’re baked, not fried, they’re much easier to make. Just roll up your filling – scrambled eggs with sausage, bell pepper, garlic, and taco seasoning – in warm tortillas, making tight little rolls. Lay them out in a baking dish, top with cheese, and bake.

Freezer Friendly Breakfast Taquitos

  1. Preheat oven to 400 degrees F. Cook sausage, add garlic, pepper and seasoning.sausage, peppers and seasoning in pan
  2. Whisk eggs in a bowl, pour over sausage mixture and cook until eggs are cooked and scrambled.eggs added to pan
  3. Heat tortillas one at a time in a skillet over low heat or all tortillas in the microwave for 30 seconds.sausage mixture placed on tortilla
  4. Assemble tortillas, divide sausage and egg mixture evenly into each tortilla.  Top each tortilla with cheese.  Tightly roll the tortillas, place each tortilla seam side down into the prepared baking dish.taquitos in a baking dish

  • 1 pound of sausage
  • 3 cloves of garlic
  • ½ red bell pepper
  • 2 teaspoons taco seasoning
  • 6 eggs
  • 8 small tortillas
  • 1 cup of shredded cheese
  • Garnish: Salsa sour cream and chopped cilantro

Instructions

  • Preheat oven to 400 degrees F. Cook sausage, add garlic, pepper and seasoning
  • Whisk eggs in a bowl, pour over sausage mixture and cook until eggs are cooked and scrambled.
  • Heat tortillas one at a time in a skillet over low heat or all tortillas in the microwave for 30 seconds.
  • Assemble tortillas, divide sausage and egg mixture evenly into each tortilla. Top each tortilla with cheese. Tightly roll the tortillas, place each tortilla seam side down into the prepared baking dish.
