- 4 large potatoes
- 6 tablespoons unsalted butter melted
- 3 garlic cloves minced
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 tablespoon parsley
Place 2 knives (or chopsticks) flat on either side of each potato. Using a sharp knife, cut thin slices every 3 to 4mm, stopping when your knife hits the utensils. This keeps the potato intact and creates that beautiful fan-like appearance. Repeat with all 4 potatoes and set aside.
In a small bowl, combine the melted butter, minced garlic cloves, salt, and pepper. Stir until fully combined to create your garlic herb butter.
Using a pastry brush, generously coat the tops of the potatoes and work the butter mixture down into each slice. Be gentle so you do not break the potato apart. Save any remaining butter for later.
Place the potatoes in the air fryer and set the temperature to 375 degrees F. Air fry for 10 minutes. Pull them out and brush the remaining butter mixture over the tops. If you have run out, melt an additional tablespoon of butter to use instead.
Return to the air fryer and cook for an additional 15 minutes, or until the potatoes are tender all the way through and the edges are golden and crispy.
Remove from the air fryer, sprinkle with fresh parsley, and serve immediately!
