Air Fryer Garlic Hasselback Potatoes
If you have never tried garlic hasselback potatoes, you are in for a serious treat! These beauties fan out into gorgeous, crispy slices that look like they came straight from a fancy restaurant, but they come together in just 35 minutes right in your air fryer. A rich garlic herb butter seeps into every single layer, making each bite buttery, garlicky, and absolutely irresistible. This easy recipe is the perfect side dish for holiday meals, Sunday dinners, or any night you want to impress your family without spending hours in the kitchen. Once you make this hasselback potatoes recipe, it is going to be on repeat all year long!

The easiest method is to use the handles of wooden spoons placed on either side of the potato as a cutting guide. Your knife will stop when it hits the spoon. You can also use 2 butter knives or chopsticks along each side. Cut your thin slices every 3 to 4mm and the potato will stay perfectly intact at the base.
Absolutely! Preheat your oven to 425 degrees F and place the potatoes in a baking dish. Bake for about 45 to 55 minutes, brushing with extra butter about halfway through, until the slices are golden at the edges and tender all the way through.
So many fun options! Try sour cream, salsa, or sliced green onions. Grating parmesan cheese over the top while they are still hot is amazing since it melts right into the crevices. Cream cheese tucked between the slices is another crowd favorite!
– Refrigerator: Store leftovers in an airtight container in the refrigerator for up to 3 days.
– Reheating: Reheat in the air fryer at 350 degrees F for 5 to 7 minutes for the crispiest results. The oven or microwave also work great.
– Freezer: Let the potatoes cool completely, then wrap each one individually in plastic wrap or aluminum foil. Place in an airtight container and freeze for up to 2 months.
– Reheating from frozen: Thaw in the refrigerator overnight and reheat in the air fryer or oven until warmed through and edges are crispy again.

Air Fryer Garlic Hasselback Potatoes
- Place 2 knives (or chopsticks) flat on either side of each potato. Using a sharp knife, cut thin slices every 3 to 4mm, stopping when your knife hits the utensils. This keeps the potato intact and creates that beautiful fan-like appearance. Repeat with all 4 potatoes and set aside.
- In a small bowl, combine the melted butter, minced garlic cloves, salt, and pepper. Stir until fully combined to create your garlic herb butter.
- Using a pastry brush, generously coat the tops of the potatoes and work the butter mixture down into each slice. Be gentle so you do not break the potato apart. Save any remaining butter for later.
- Place the potatoes in the air fryer and set the temperature to 375 degrees F. Air fry for 10 minutes. Pull them out and brush the remaining butter mixture over the tops. If you have run out, melt an additional tablespoon of butter to use instead.
- Return to the air fryer and cook for an additional 15 minutes, or until the potatoes are tender all the way through and the edges are golden and crispy.
- Remove from the air fryer, sprinkle with fresh parsley, and serve immediately!
