Ingredients

  • 1 ½ pounds cod fresh or frozen & thawed
  • 1 cup long-grain white rice uncooked
  • 2 cups chicken broth
  • 1 cup crispy fried onions divided
  • 2 tablespoons salted butter cold and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon fresh parsley + more for garnish
  • ¼ cup parmesan cheese finely shredded
  • 1 lemon sliced for serving

Instructions

  • Preheat oven to 375 degrees F, then grease a 9x13 baking dish. Add rice and broth to the prepared baking dish.

  • Cover tightly with foil and bake for 20 minutes.

  • Top rice with ½ cup crispy friend onions and cod filets, drizzle oil on top of fish, then season with garlic powder, paprika, salt, and pepper.

  • Place butter cubes on top of fish filets. Cover pan tightly with foil and bake for 15 minutes.

  • Uncover, top with remaining crispy fried onions, fresh parsley, and parmesan, then bake an additional 5 minutes or until fish is cooked through and flakey.

  • Garnish with additional fresh parsley, then serve with lemon wedges or slices.
