- 1 ½ pounds cod fresh or frozen & thawed
- 1 cup long-grain white rice uncooked
- 2 cups chicken broth
- 1 cup crispy fried onions divided
- 2 tablespoons salted butter cold and cubed
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ½ teaspoon fresh parsley + more for garnish
- ¼ cup parmesan cheese finely shredded
- 1 lemon sliced for serving
Preheat oven to 375 degrees F, then grease a 9x13 baking dish. Add rice and broth to the prepared baking dish.
Cover tightly with foil and bake for 20 minutes.
Top rice with ½ cup crispy friend onions and cod filets, drizzle oil on top of fish, then season with garlic powder, paprika, salt, and pepper.
Place butter cubes on top of fish filets. Cover pan tightly with foil and bake for 15 minutes.
Uncover, top with remaining crispy fried onions, fresh parsley, and parmesan, then bake an additional 5 minutes or until fish is cooked through and flakey.
Garnish with additional fresh parsley, then serve with lemon wedges or slices.
