Tender fish fillets bake right on top of fluffy long grain rice, soaking up flavor from the broth and seasonings. Brown rice takes longer to cook than white rice or regular rice, so it’s not recommended unless you increase the liquid and baking time significantly.
Any type of firm white fish works well, such as haddock or pollock, as long as the fillets are similar in thickness to cod fillets.
Both work great—just be sure frozen fish is fully thawed and patted dry before baking.

Baked Fish and Rice
- Preheat oven to 375 degrees F, then grease a 9×13 baking dish. Add rice and broth to the prepared baking dish.
- Cover tightly with foil and bake for 20 minutes.
- Top rice with ½ cup crispy friend onions and cod filets, drizzle oil on top of fish, then season with garlic powder, paprika, salt, and pepper.
- Place butter cubes on top of fish filets. Cover pan tightly with foil and bake for 15 minutes.
- Uncover, top with remaining crispy fried onions, fresh parsley, and parmesan, then bake an additional 5 minutes or until fish is cooked through and flakey.
- Garnish with additional fresh parsley, then serve with lemon wedges or slices.

- ¼ cup parmesan cheese finely shredded
- 1 lemon sliced for serving
Instructions
