Preheat oven to 375 degrees F and spray a 9x13 or similar sized casserole dish with cooking spray.
Pat pork chops dry with a paper towel and season both sides with salt and pepper.
Beat the eggs with the milk in a large shallow bowl until combined. Set aside.
On a large plate or mixing bowl, combine the crushed crackers, panko crumbs, garlic powder, onion powder, oregano, and paprika until well mixed.
Dip the pork chops into the egg mixture to coat and shake off any excess egg.
Next, press the pork chops into the cracker mixture to coat both sides and edges. Transfer pork chops to your baking dish.
Add the thinly sliced butter pats to the tops of the pork chops.
Bake in the oven uncovered for 30-40 minutes, or until the pork chops are cooked through with a minimum internal temperature of 145F.
Allow the pork chops to rest for 5-10 minutes before serving, enjoy!
