- 14- ounce loaf brioche bread
- ¾ cup Biscoff cookie butter
- 8 ounce package cream cheese softened
- 6 large eggs
- 1 ½ cups whole milk
- ½ cup heavy whipping cream
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 4 tablespoons unsalted butter cold & cubed
- 2 tablespoons Biscoff cookie butter for topping
- 1/2 cup Biscoff cookie crumbs
Cut the brioche into 1-inch cubes.
Grease your baking dish with butter or nonstick spray. Arrange half of the bread cubes in an even layer.
Beat the softened cream cheese and cookie butter together until smooth.
Drop spoonfuls of the filling over the bread, then top with the remaining slices of bread cubes.
In a large bowl, whisk together the eggs, milk, cream, vanilla, and cinnamon to create the egg mixture.
Slowly pour the custard evenly over the bread. Cover and refrigerate for at least 3 hours or overnight for the next morning.
Mix the cold butter with the cookie crumbs until crumbly and sprinkle over the casserole.
Cover with foil and bake for 45 minutes, then uncover and bake another 15 minutes until golden and set. Drizzle with melted cookie butter before serving.
