- 2 cups Spring Mix Lettuce
- 3-4 cups romaine lettuce
- 3 Thin Chicken Breast
- 4-5 slices Bacon cooked and crumblered
- 2 hard boiled eggs sliced or chopped
- 1 small Red Onion thinly sliced
- 1 large English cucumber
- Tomato cut into quarters
- 1 cup Blue Cheese crumbles
- 1 large Avocado sliced or cubed
- 1 tablespoon Blackened seasoning
- 2 teaspoon Black Pepper
Cook the bacon until crispy, then crumble it and set it aside. Season chicken breast with blackened seasoning and cook as desired. Once chicken is fully cooked let rest for 5 minutes before slicing.
Rinse and chop the romaine lettuce and spring mix lettuce, place it in a large salad bowl.
Cut the avocado in half and remove the pit. Dice the avocado flesh into small pieces and add them to the salad bowl. Add the crumbled blue cheese, sliced hard-boiled eggs, cucumbers, tomatoes, crumbled bacon, sliced onions, and black pepper to the salad bowl.
Add the sliced seasoned chicken to the salad bowl.
Drizzle your favorite salad dressing over the salad and toss again to coat evenly.
