Preheat your oven to 350°F (175°C) and line a 9x13 baking dish with parchment paper for easy removal.
In a large bowl or the bowl of your stand mixer, combine slightly melted butter, brown sugar, and cane sugar. Cream together for 2 minutes until smooth and fluffy.
Add in eggs, heavy whipping cream, and vanilla extract. Mix on low just until combined.
In a small bowl, whisk together the dry ingredients: all-purpose flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing until just incorporated.
Gently fold in the crushed Oreos.
Spread the blondie batter evenly into the prepared pan and bake for 35 minutes, or until the top of the blondies is golden brown.
Cool completely on a wire rack before slicing into bars. Serve as is or with a scoop of vanilla ice cream for an extra treat!
