Dressing
- ½ cup sour cream
- ½ cup mayonnaise
- 1/2 cup finely diced dill pickles
- 2 tablespoon fresh dill heaping
- 1 tablespoon pickle juice
- 1 teaspoon honey
- 1 teaspoon salt
- ½ teaspoon black pepper
Salad
- 1.5 cups red cabbage chopped
- 3 cups Romaine lettuce chopped
- 2 cups cauliflower chopped fine or riced
- Dill pickle dressing
- ½ cup Feta cheese crumbled
In a mixing bowl, combine sour cream, mayonnaise, fresh dill, pickle juice, honey, salt, and black pepper.
Whisk together until well combined and creamy. Set aside.
In a large salad bowl, combine chopped red cabbage, dill pickle, Romaine lettuce, feta and cauliflower.
Pour the dill pickle dressing over the salad and toss until all the ingredients are well coated.
