Dorito Chicken Casserole

Ingredients

  • ½ tablespoon oil
  • 4 large chicken breasts cut into bite size pieces (about 4 cups shredded chicken)
  • 1 oz packet of taco seasoning
  • ¼ cup water
  • 15 oz can black beans drained and rinsed
  • 1 ½ cups frozen corn
  • 21 oz cream of chicken soup
  • 10 oz diced tomatoes with green chiles
  • ½ cup sour cream
  • 1 teaspoon garlic powder
  • 2 cups shredded monterey jack cheese with jalapeno peppers divided
  • 9.25 oz nacho cheese Doritos lightly crushed

Instructions

  • Preheat oven to 375°F and spray a baking dish or baking pan with non-stick cooking spray. In a skillet over medium heat, add oil and cook the raw chicken for 5–7 minutes until no longer pink.

  • Stir in taco seasoning and water, then cook for another 2 minutes.

  • Spread the chicken mixture evenly across the bottom of the casserole dish. Sprinkle black beans and corn over the top of the chicken layer.

  • In a large bowl combine cream of chicken soup, Rotel tomatoes, sour cream, and garlic powder. Stir in 1 cup of cheese.

  • Spread the creamy sauce over the chicken and veggies, making sure everything is covered.

  • Top with remaining cheese and a layer of Doritos (crushed doritos, but not too fine).

  • Bake in a preheated oven for about 25 minutes, until hot and bubbling around the edges and warm throughout.
