Dorito Chicken Casserole
- Preheat oven to 375°F and spray a baking dish or baking pan with non-stick cooking spray. In a skillet over medium heat, add oil and cook the raw chicken for 5–7 minutes until no longer pink.
- Stir in taco seasoning and water, then cook for another 2 minutes.
- Spread the chicken mixture evenly across the bottom of the casserole dish. Sprinkle black beans and corn over the top of the chicken layer.
- In a large bowl combine cream of chicken soup, Rotel tomatoes, sour cream, and garlic powder. Stir in 1 cup of cheese.
- Spread the creamy sauce over the chicken and veggies, making sure everything is covered.
- Top with remaining cheese and a layer of Doritos (crushed doritos, but not too fine).
- Bake in a preheated oven for about 25 minutes, until hot and bubbling around the edges and warm throughout.

- 1 oz packet of taco seasoning
- ¼ cup water
- 15 oz can black beans drained and rinsed
- 1 ½ cups frozen corn
- 21 oz cream of chicken soup
- 10 oz diced tomatoes with green chiles
- ½ cup sour cream
- 1 teaspoon garlic powder
- 2 cups shredded monterey jack cheese with jalapeno peppers divided
- 9.25 oz nacho cheese Doritos lightly crushed
