Garlic Roasted Pork Tenderloin

Ingredients

  • 2 pounds pork tenderloin
  • 1/4 cup salted butter softened
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon coarse black pepper
  • 1 tablespoon chopped fresh herbs sage, thyme, and oregano
  • 5 cloves garlic finely chopped (plus whole cloves for roasting, if desired)
  • Fresh herbs for garnish optional

Instructions

  • Preheat oven to 400°F.
  • Stir together softened butter, herbs, and chopped garlic to form a paste.
  • Place the pork on a greased sheet pan and sprinkle well on all sides with salt and pepper.
  • Rub the butter paste over all of the pork, concentrating any extra chunks on the top of the tenderloin.
  • Roast for 25-30 minutes or until the thickest portion of the pork registers 150°F.
  • Remove from the oven, baste with melted butter/drippings from the pan, and cover loosely with aluminum foil for 5 minutes.
  • Baste again with pan drippings, sprinkle with fresh herbs, if desired, and slice.
  • Serve immediately.
