- 14 Manicotti Pasta
- 1 lb Italian sausage
- 16 ounces Ricotta
- 1 & 1/2 cups Shredded Mozzarella
- 2 Tablespoons Fresh Basil minced
- 1/2 cup Frozen Spinach thawed and drained of any liquid
- 24 Ounces Marinara Sauce
- 1 egg
- 5 Garlic cloves finely minced
- 1 Sweet Onion Diced
- 1 Teaspoon Kosher Salt
- 1 Teaspoon Black Pepper
- 1 Teaspoon Italian seasoning
- Basil for garnish
Cook pasta for 5 minutes in salted water. Drain and set aside. Drain spinach by wrapping in a paper towel and squeezing tightly allowing all water to come out.
In a skillet cook sausage until no longer pink and drain fat.
Add onion and garlic, cook until softened, 2-3 minutes Take off heat and allow it to cool.
Preheat the oven to 375 degrees F and prepare a 9X13 baking dish with cooking spray, set aside.
In a small bowl add ricotta, egg, italian seasoning, spinach, fresh basil, salt, pepper, and sausage mixture.
Combine and add into a piping bag. Pour your marinara sauce into your pan.
Fill cooked manicotti with mixture and place into your pan.
Top with mozzarella cheese and cover with foil. Bake for 25 minutes covered and 10 minutes uncovered.
Top with fresh basil!
