Ingredients

  • 14 Manicotti Pasta
  • 1 lb Italian sausage
  • 16 ounces Ricotta
  • 1 & 1/2 cups Shredded Mozzarella
  • 2 Tablespoons Fresh Basil minced
  • 1/2 cup Frozen Spinach thawed and drained of any liquid
  • 24 Ounces Marinara Sauce
  • 1 egg
  • 5 Garlic cloves finely minced
  • 1 Sweet Onion Diced
  • 1 Teaspoon Kosher Salt
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon Italian seasoning
  • Basil for garnish

Instructions

  • Cook pasta for 5 minutes in salted water. Drain and set aside. Drain spinach by wrapping in a paper towel and squeezing tightly allowing all water to come out.

  • In a skillet cook sausage until no longer pink and drain fat.

  • Add onion and garlic, cook until softened, 2-3 minutes Take off heat and allow it to cool.

  • Preheat the oven to 375 degrees F and prepare a 9X13 baking dish with cooking spray, set aside.

  • In a small bowl add ricotta, egg, italian seasoning, spinach, fresh basil, salt, pepper, and sausage mixture.

  • Combine and add into a piping bag. Pour your marinara sauce into your pan.

  • Fill cooked manicotti with mixture and place into your pan.

  • Top with mozzarella cheese and cover with foil. Bake for 25 minutes covered and 10 minutes uncovered.
