Preheat the oven to 350F degrees and spray a 9x13 baking dish with cooking spray. Warm tablespoon of butter in a large pan over medium high heat and add the diced peppers and onions. Saute for several minutes until softened and set aside.
Unroll one container of crescent rolls and press into the bottom of your baking dish, coming up the sides of the pan about ½ inch. (You can also roll out the crescent dough on a lightly floured surface with a rolling pin).
Mix together the mayo, garlic, mustard, salt and pepper and spread evenly onto the crescent dough.
Add 6 slices of provolone cheese on top.
Evenly layer the sliced deli roast beef onto the cheese.
Add the sauteed pepper and onions on top of the roast beef.
Place the remaining 6 slices of cheese onto the top.
Unroll the remaining crescent dough and roll out with a rolling pin to fit over the top of the fillings. Pinch any open seams closed.
Mix the beaten egg and parmesan together in a small bowl and brush over the top of the crescent dough.
Cover with foil and bake in the oven for 30 minutes. Remove foil and bake for another 15-20 minutes until the top of the dough is cooked through and a golden brown.
Remove from the oven and allow to cool for 10 minutes before slicing and serving, enjoy!
