Thai Chicken Pizza

Pizza night is always a win at our house, and this Thai Chicken Pizza is one of our favorite pizzas when we want something a little different.

Equipment

Ingredients

  • 1 lb pizza dough
  • 1 ½ cups mozzarella cheese
  • 1 ¼ cup cooked chicken breast diced*
  • ½ cup bean sprouts
  • ¼ cup matchstick carrots
  • ¼ cup crushed peanuts
  • 2 green onions sliced
  • 1 tablespoon fresh cilantro leaves for garnish

For the sauce:

  • ½ cup peanut butter
  • ½ cup soy sauce
  • cup sweet chili sauce
  • 3 tablespoons brown sugar
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground ginger

Instructions

  • Preheat your oven to 450°F, placing a pizza stone inside if you’re using one. Roll out the pizza dough on a lightly floured surface and transfer it to a pizza pan, pizza peel, or large baking sheet lined with parchment paper.

  • In a medium bowl, whisk together the peanut butter, soy sauce, thai sweet chili sauce, brown sugar, onion powder, garlic powder, and ground ginger until fully combined and smooth. Spoon the sauce evenly over the dough, leaving about a half-inch border around the edges.

  • Sprinkle about three-quarters of the mozzarella cheese over the sauce, then layer on the diced chicken, bean sprouts, matchstick carrots, crushed peanuts, and green onions.

  • Finish with the remaining cheese and bake for 12–17 minutes, until the crust is golden and the cheese is bubbly. Remove from the oven, garnish with fresh cilantro, slice, and serve warm.
