Football season may be over, but the game is still on in my kitchen. That’s because Soy Vay, the maker of a line of delicious Asian sauces, has just announced…the Battle of the Blands!

The way this works is, you pick a bland, boring food and use a Soy Vay sauce to turn it into something fabulous. There are two teams, Team Rice and Team Tofu. That made it an easy choice for me, because I love tofu (you kind of have to if you’re married to a vegetarian, haha).

So I’m rooting for TEAM TOFU to go all the way in this epic battle. And to help, I’ve created this Teriyaki Tofu Bowl to inspire everyone else to vote for my favorite team.

Making this is pretty easy, because the Soy Vay® Veri Veri Teryiaki® Sauce does most of the work. You just marinate the tofu in that and bake it, and it goes from plain, bland tofu to tangy, flavorful Teriyaki Tofu. Then serve that over some rice noodles with crunchy snap peas, sweet pineapple chunks, carrots, scallions, and a smidge more sauce, and you’ve got yourself a party in a bowl.

Teriyaki Tofu Bowl

 
INGREDIENTS:
1 cup, plus 1/4 cup Soy Vay® Veri Veri Teryiaki® Sauce
1 package (14 oz.) firm tofu
4 cups cooked rice noodles or spaghetti noodles
1 cup sliced carrots
1 cup snap peas
1 cup pineapple chunks,
2 green scallions thinly sliced.

 

DIRECTIONS:

1. Cut the tofu into 1/4 inch slices and place on paper towels to dry out and drain for about 10 mins.

2. Arrange the tofu in a shallow dish and pour 1 cup of Teriyaki sauce over tofu. Cover and marinate in the fridge for 20-30 minutes.

3.Preheat the oven to 375°F. Remove tofu from marinade bath, and place in a single layer on a baking sheet, cook the tofu for 30 minutes, turning once halfway through cooking.

4. Once tofu is done, place 1 cup of noodles in each bowl, and divide carrots, snap peas, pineapple, baked tofu and scallions amongst the 4 bowls. Top each bowl with 1 Tablespoon of Soy Vay® Veri Veri Teryiaki® Sauce and serve immediately.

    Great looking recipe. I have one question to ask before l make this. Do you cook the carrots, pineapple, and the snap peas, or do you leave raw. I’m a little confused. The photo of the finished meal to me, looks like the carrots are cooked, please help.

        I also wanted to add in that I put some extra veggies in the bowl like thin slices of red bell pepper, celery, edamame and baby corn sometimes. It just adds a bit extra to the dish, especially because I love veggies!!!
        Oh, I also add some of the canned pineapple juice into the tofu while it marinates.
