One Pot Garlic Shrimp Tortellini - Step 5

For example, take this super easy One Pot Garlic Shrimp Tortellini. All you need is a package of SeaPak Shrimp Scampi, a bag of refrigerated cheese tortellini, and a smattering of fresh basil, sun-dried tomatoes, and marinated artichoke hearts. Just cook everything in one pot, top it with some parmesan cheese, and presto – a summery seafood meal in less than 15 minutes.

One Pot Garlic Shrimp Tortellini - enjoy!

One Pot Garlic Shrimp Tortellini

Ingredients:
1 package(12oz) of SeaPak Shrimp Scampi,
9 oz of refrigerated cheese tortellini
1/4 cup fresh basil, sliced
1/4 cup sun dried tomatoes, sliced
1/2 cup marinated artichoke hearts, chopped

Direction:
1.Over a medium heat, cook 1 package of SeaPak Shrimp Scampi for about 5 mins (until all sauce has cooked off of shrimp.)

2. Add in tortellini, tomatoes, artichoke hearts and 1/4 cup of water.

3. Cover and reduce heat to a low simmer. Cook covered for 6-8 minutes, until tortellini are cooked.

4. Removed from heat and stir in fresh basil. Top with optional parmesan cheese.

  3. I’ve made this twice with limited success. The first time I used sun dried tomatoes in oil from a jar which made the dish too oily. The second time I used the packaged kind and the tomatoes didn’t soften. Any suggestions? Both dishes tasted okay but I thought could have been better.
