Top o’ the morning, everyone!

Yes, it’s that time of year again. Time to break out your best green togs, brush up your favorite Irish ballads, and serve a hearty dinner of corned beef and cabbage. The only question is, what should you serve afterwards? What’s the perfect dessert for St. Patrick’s Day?

The easy answer to that question is, “Anything green.” And when I think of green desserts, I always think of mint. And when I think of mint, I think of chocolate too – because these two flavors together are a combination that’s just can’t miss.

My new Mint Chocolate Brownies take this can’t-miss combo to its absolute max. They start with ordinary brownie mix…amp up the chocolate by stirring in chocolate chips…bring in the mint theme with a green-tinted marshmallow-mint icing…and top it all off with chopped mint Oreo cookies. The finished product is half chocolate, half mint, and all delicious.

Bring out these yummy green treats at your St. Paddy’s Day party, and watch them disappear faster than a leprechaun’s gold.

How to Make Mint Chocolate Brownies

Ingredients you will need:

box brownie mix
eggs
vegetable oil
¼ cup water
Optional: chocolate chips (for extra creamy fudginess)
butter
marshmallow fluff
powdered sugar
mint extract
Green gel food coloring
mint OREO cookies
*Substitute melted white chocolate for the marshmallow fluff if you aren’t a marshmallow fan.

  1. Blend brownie mix, eggs, vegetable oil, and water with a hand mixer until smooth. Stir in chocolate chips. Pour into a greased 8×8 square pan, and bake at 350 F for 20 minutes.Mint Chocolate Brownies - Brownie mix in a glass bowl
  2. While cooking, blend softened butter, marshmallow fluff, powdered sugar, mint, and gel coloring with a hand mixer until soft and fluffy.  Chop OREO cookies into small pieces, and take 1 hand full of them and blend into your icing mixture.Mint Chocolate Brownies - Mint frosting and crush Oreos in a bowl
  3. Once brownies are cooked, set aside to cool completely.  Once cooled, spread icing over brownies in a thick, even layer, and then sprinkle OREOs over the top. Push in a little so they stick.Mint Chocolate Brownies in a baking pan

Ingredients
 

  • 1 box brownie mix
  • 2 eggs
  • cup vegetable oil
  • ¼ cup water

  • 1 sleeve chopped mint OREO cookies
