Folks, can we get a little love here for the good old peanut butter and jelly sandwich?
I mean, we all loved these kids, right? But somehow, now that we’re grown up, we feel like we’re not supposed to enjoy them anymore. Like they’re not sophisticated enough, or something.
Well, hogwash, I say. The PB&J is a classic for a reason. It’s satisfying in every way, with protein-packed peanut butter to fill up your tummy and sweet jelly to give your taste buds a little extra thrill.
The only problem with it is that sometimes it gets squashed in a lunch box. But that’s easy to fix – just cut it up and put it in an EasyLunchbox, with fresh fruit and veggies. I picked strawberry/blueberry mix, cucumbers, and carrots, but you can use whatever you like best.
And if anyone laughs at you for eating a “kids’ lunch,” just offer them a bite and see if their eyes don’t light up.

Here is what I used to make our Peanut Butter Jelly Protein Boxes!
Lunchbox Container: EasyLunchboxes
4 PB&J sandwiches
2 cups strawberries
2 cups blueberries
1 large english cucumbers
4 large carrots
1. Place each ingredient in a different cup of the snack box. Seal with lid and refrigerate until ready to use. Use with in 3 days.
