Cheesy Guinness Beef Sliders
St. Paddy’s Day is on the way, and I thought it was a good time to try a new recipe with a much-loved Irish ingredient: Guinness stout. This is a beer so dark and thick that it’s practically a meal by itself. Adding a splash of it to any recipe gives it a hint of the beer’s famous, velvety, bittersweet flavor.
I’ve already used Guinness in a dessert recipe, my wonderful Guinness Chocolate Cupcakes with Baileys Cream Cheese Frosting. But I’d never tried it in a savory dish. So for this Irish holiday, I decided to do my own take on Guinness beef sliders.

What are Cheesy Guinness Beef Sliders, you ask? Well, they’re like a really good hot roast-beef sandwich, topped with cheese and sautéed mushrooms and onions. But what really takes them to the next level is the glaze – a blend of Guinness, melted butter, brown sugar, and spices, drizzled all over the tops of the sandwiches.
For my version of the sliders, I decided to use both cheddar and Swiss cheese, along with a touch of Dijon mustard. As the cheese melts, all those flavors blend together with the hearty tastes of the beef, mushrooms, and onions. And the drizzle of Guinness glaze over the top adds the perfect finishing touch that’s sure to get your Irish eyes smiling.

DIRECTIONS:
1.Melt butter over medium-high heat. Add in sliced mushrooms, onion and 1/4 cup of Guinness. Saute for 5-7 minutes or until liquid is well absorbed.
2. Next lets prepare the glaze! Combining glaze ingredients: Guinness, butter, brown sugar, onion powder, parsly and minced garlic in to a medium saucepan.
3. Bring mixture to a boil, then turn heat down to low and simmer until thickened and reduced by at least half.
4. Slice the sheet of rolls in half. Place the bottom half in the 9 X13 baking dish. Spread mustard on buns. Next top with roast beef, sautéed mushrooms & onions, Swiss cheese and cheddar cheese.
5. Top with both sheet of buns. Pour glaze evenly over sandwiches.
6. Bake, uncovered, at 350 F degrees for 25-30 minutes.

Ingredients
Sandwiches:
- 1 Tbsp. butter
- 8 oz. sliced mushrooms
- 1/2 small vidalia onion thinly sliced
- 1/4 c. Guinness Beer
- 1 package Hawaiian Savory Butter Rolls
- 3 Tablespoons dijon mustard
- 1 lb. sliced roast beef
- 6 slices Swiss cheese
- 6 slices cheddar cheese
Glaze:
- Remainder 3/4 bottle of Guinness
- 1 stick butter
- 1/4 cup brown sugar
- 1 tsp onion powder
- 1 tbsp dried parsly
- 2 cloves garlic minced
Instructions
