Pretty much everyone loves pizza. Some of us love it so much, we’d eat it for lunch every day if we could. But those greasy slices from the food court aren’t very healthy, and anyway, picking one up every day would get expensive.

Of course, you could make your own pizza at home. But it’s kind of a lot of hassle to bake a whole pie just to cut off one slice and stick it in your lunchbox. Besides, if you eat one slice a day, it would take you over a week to go through the whole thing, and it probably wouldn’t keep that long.

Fortunately, there’s an easy trick for whipping up your own mini pizzas at home. Just toast an English muffin and top it with pizza sauce, cheese, and your favorite toppings (I used mini pepperoni slices). Then pop it under the broiler for just a minute or two until the cheese melts.

English Muffin Pizza Lunchbox Idea

Ingredients:
4 english muffins, cut in half
6 Tablespoons pizza sauce
8 Tablespoons shredded mozzarella
2oz mini pepperoni
2 cups grapes
4 mini cucumbers

Directions:

  1. Preheat the oven to 375 degrees F. Place the English muffin halves cut side up onto a baking sheet. Spoon pizza sauce evenly on top of each one. Top with mozzarella cheese and pepperoni slices.English Muffin Pizza Lunchbox Idea - English muffin pizzas on baking sheet

    Can you put how many Weight Watcher points are in each lunchbox? That would be very helpful. Thank you.

    1. Hi Cheryl, the points will depend on what brand of muffins, sauce and such. I would recommend using your WW app to to input the ingredients you use.
