How to Make a St. Patrick’s Day Appetizer Board
You’ve heard of the luck of the Irish? Well, let me introduce you to the potluck of the Irish – otherwise known as great eats for your St. Patrick’s Day gathering.
Our idea of a great St. Patty’s Day celebration is helping our leprechaun find all the treasure. And boy, are there many treasures to be found on this board! Let’s start at the bottom left corner with my Shamrock Tortilla Chips with cheese dip. These are just made from ordinary spinach tortillas or wraps, and I used this cookie cutter to cut them into festive shamrock shapes.
Moving to the right, there are some pieces of my Corned Beef and Sauerkraut Reuben Braid. I know this looks complex, but it is super easy to make! And what a crowd pleaser! Serve it with a cup of Thousand Island dressing for dipping.
Spreading over top of those, I’ve spread a lucky rainbow of colorful fruits and veggies: red strawberries, orange bell pepper strips, yellow pineapple, green broccoli florets, blueberries, and purple grapes. Each end of the rainbow has its own “cloud”: classic hummus for the veggies and a mixture of half vanilla yogurt and half marshmallow fluff for the fruit.
And in the upper left, we have some super easy desserts. My St. Patrick’s Day Chocolate Dipped Oreos are dipped in chocolate and topped with sprinkles: I did some with rainbow sprinkles and some with green sugar crystals on white chocolate. Plus I added a few “pots of gold”: little plastic cauldrons (also great for Halloween parties) filled with Skittles, Lucky Charms cereal, mini vanilla wafers, and Hershey Gold Nuggets.
You can do a lot of the setup work for this ahead of time. I prepped my fruit and veggies the night before and also prepared the Oreos. I made 16 of these, even though the board only shows a few; they’re easy to make, so you can either have extras ready to restock or make your rainbow smaller to fit them in. The day of my event, I prepared the corned beef braid and the shamrock tortillas. The braid takes 35 minutes, but I saved time by prepping the chips while it was cooking, and then I filled the little gold pots while the chips were baking. So I had everything ready in one hour, and it took only 10 minutes to set up my board.
And there it is: a St. Patrick’s Day feast on a board. Just add drinks, and invite all your favorite leprechauns.
