Top o’the morning, everyone! St. Patrick’s Day is just around the corner, and I’m celebrating with a special series of easy Irish-themed goodies. And what could be easier than a new spin on the classic cereal bar treat?Lucky Charms Marshmallow Treats cut into squares

Cereal bars are probably the simplest cookie ever created. Just four ingredients, three steps, and no baking. And they’re easy to dress up for any holiday, from Christmas to Halloween.

I could have done my St. Pat’s treats the same way, by just dipping them in green candy melts, but where’s the challenge in that? No, I wanted a special Irish element mixed right into the squares. And I got it by replacing the Rice Krispies with Lucky Charms – the cereal that embodies the luck of the Irish in marshmallow form.

Because the cereal contains a rainbow of colorful marshmallows – you know, pink hearts, green clovers, and so on – these bars don’t need any adornment to make them look special. You can turn up the color level by adding a few extra marshmallows on top, but you don’t need to. A treat that’s colorful, delicious, and also amazingly easy? Recipe Tips: 

Storage: Store in an airtight container for 4-5 days.

  • You can also add 1⁄2 teaspoon vanilla and/or 1⁄2 teaspoon almond extract to the melted marshmallow mixture after removing it from the heat. Stir in and then add the cereal.
  • You can combine the butter and marshmallows in a large microwave-safe bowl and microwave for 30 seconds at a time, stirring between each interval, until the mixture is melted and combined.

Lucky Charms Marshmallow Treats

  1. Grease a 9x 13 pan with butter or nonstick cooking spray.

Lucky Charms Marshmallow Treats

These Lucky Charms Rice Krispie Treats are the perfect sweet treat to make for St. Patrick's Day. Easy enough for the kiddos to make too!

Ingredients
 

  • 1/2 cup salted butter
  • 16 oz. mini marshmallows
  • 12 oz. Lucky Charms cereal plus some additional marshmallows to decorate the top of the pan of treats
