The luck of the Irish in a crispy bar form.
Top o’the morning, everyone! St. Patrick’s Day is just around the corner, and I’m celebrating with a special series of easy Irish-themed goodies. And what could be easier than a new spin on the classic cereal bar treat?
Cereal bars are probably the simplest cookie ever created. Just four ingredients, three steps, and no baking. And they’re easy to dress up for any holiday, from Christmas to Halloween.
I could have done my St. Pat’s treats the same way, by just dipping them in green candy melts, but where’s the challenge in that? No, I wanted a special Irish element mixed right into the squares. And I got it by replacing the Rice Krispies with Lucky Charms – the cereal that embodies the luck of the Irish in marshmallow form.
Because the cereal contains a rainbow of colorful marshmallows – you know, pink hearts, green clovers, and so on – these bars don’t need any adornment to make them look special. You can turn up the color level by adding a few extra marshmallows on top, but you don’t need to. A treat that’s colorful, delicious, and also amazingly easy? Now that’s a real bit of luck!
Recipe Tips:
Storage: Store in an airtight container for 4-5 days.
- You can also add 1⁄2 teaspoon vanilla and/or 1⁄2 teaspoon almond extract to the melted marshmallow mixture after removing it from the heat. Stir in and then add the cereal.
- You can combine the butter and marshmallows in a large microwave-safe bowl and microwave for 30 seconds at a time, stirring between each interval, until the mixture is melted and combined.
Lucky Charms Marshmallow Treats
- Grease a 9x 13 pan with butter or nonstick cooking spray.
- In a large pan or stockpot, melt the butter over low-medium heat on the stovetop.
- Add the mini marshmallows to the melted butter and stir while continuing to heat over low.
- Use a spatula to stir constantly so the marshmallow does not burn on the bottom of the pan. Stir until the marshmallows are completely melted into the butter.
- Remove from heat and add the Lucky Charms into the marshmallow mixture.
- Stir until the cereal is fully coated with the melted marshmallow mixture.
- Spread into the prepared pan. Use the palms of your hands to press the marshmallow treats evenly into the pan.
- If desired, strategically place a few additional marshmallows on the top and press them down into the bars. This is optional, but give the marshmallow treats a little more character.
- Allow them to cool completely. Cut into bars and serve.
