Dill Potato Salad

  1. Peel and chop the potatoes in cubes (about 1 inch) Add the potatoes to a pot, cover them with water, place the pot on the stove and bring the water to a boil. Once the water is boiling, reduce heat to medium-low and continue cooking for 5 minutes.ingredients for dill potato salad
  2. Drain and rinse the potatoes under cold water.
  3. Dice the celery and shallot and chop the fresh dill.

Recipe Tips:

  • Don’t boil the potatoes too long: Potatoes should be cooked until they are just fork-tender but still firm. Boiling potatoes too much will make them overly mushy.

Ingredients
 

  • 3 pounds of red skin potato in cubes
  • 1/2 cup diced celery
  • 1 shallot diced
  • ¾ cup mayonnaise
  • ¼ cup red wine vinegar
  • 1 tablespoon grainy mustard
  • ¼ cup chopped fresh dill
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions
