Once again, I found another Rachael Ray goody in her monthly magazines 🙂 I am always looking for fun twists on old favorites.

With my whole family being cheese lovers, mac & cheese has always been a favorite around here. My two children have a deep love for bacon and tomatoes, so I thought this mac & cheese recipe would be a winner!

This recipe turned out great. The girls & Darryl all loved it!

BLT Mac ‘n’ Cheese

  1. Preheat the oven to 374 degrees. Cook your real bacon in a skillet or your fake bacon in the microwave. When it is done, cut into 1 inch pieces.
  2. Quarter your cherry tomatoes and put aside.
  3. Meanwhile in a large pot of boil, salted water, cook the pasta until almost al dente; drain.
  4. In the same pot, bring the milk to a simmer over medium heat. Whisk in the turmeric and add your pinch of pepper!
  5. Stir in cream cheese until smooth.
  6. Stir in cheddar cheese until melted.
  7. Add the pasta, bacon and tomatoes; season with salt and pepper.
  8. Transfer to a 9-by-13 inch casserole dish and bake until heated through… about 20 mins.
  9. Serve with a side salad and enjoy!a child sitting at a table eating the BLT Mac 'n' Cheese

Ingredients
 

  • - 4 slices bacon you can use either vegetarian or real
  • - 12oz fusilli pasta
  • - 2 1/4 cups of milk
  • - 6oz cream cheese
  • - 2 cups shredded orange cheddar cheese
  • - 6oz cherry tomatoes
  • - 1/2 tsp. turmeric
  • - salt and pepper
  • - you fav lettuce for your side salad pictured is my salad bowl plant! love it... just pick and eat!

  1. Just an FYI, you don’t mention the Tumeric as an ingredient in the ingredients list. I had to do a redo because I saw it later. Just a thought. Other than that, thank you for the amazing meals.
