Wintertime calls for comfort food.
In these long, dreary winter months, there’s nothing quite so comforting as coming in out of the cold and sitting down to a hot meal. Nothing fancy, nothing trendy, just good solid food that warms you up inside and out.
This Comforting Beefy Noodle Casserole fits the bill perfectly. It’s a whole hot meal packed into one dish: beef, veggies, noodles, and a nice brown gravy, all topped off with golden-brown puffs of hot biscuits. And everything in it is kid-friendly, so it’s a meal the whole family can enjoy.
This is a little more complicated to make than a lot of my one-dish meals, because you have to put together the casserole first, then make the biscuit topping and spoon dollops of it over top. However, if you’re in a pinch, you can save a bit of time by using a tube of refrigerated biscuits instead. Just peel them apart and layer them on top of the casserole before baking it.

Comforting Beefy Noodle Casserole
- Preheat the oven to 400°F In a large skillet over medium heat, brown the ground beef (or meatballs) . Do not drain.
- Add the flour, mix well to coat the beef.
- Net, add the gravy packet and water. Stir. Bring to a boil, reduce to simmer when gravy starts to thicken, about 2 minutes. Remove from heat. Stir in cooked pasta, peas and carrots. Spoon into your favorite casserole dish.
- For the biscuit topping: (use recipe below or refrigerated tube of biscuits will also work)
- In a medium sized bowl, mix the flour, baking powder and salt. Slowly add the milk and melted butter. Mix until a soft dough, or very thick batter forms.
NOTE: Dough should be loose, but not runny. - Spoon the dough onto the casserole and bake for 20-25 mins or until golden brown and biscuit is set.

- 1 lb ground beef or pre-cooked meatballs
- 1/4 cup flour
- 1 0.87oz packet dry beef gravy
- 2 cups water
- 12 oz frozen peas & carrots
- For the biscuit topping: use refrigerated tube biscuits or recipe below
- 2 cups flour
- 1 cup milk
- 1 tablespoon butter melted
- 1 teaspoon baking powder
- 1/2 teaspoon salt
