Cucumber Sushi Lunch Box Idea
Though I’m usually not shy about trying foreign cuisines at home – Chinese, Thai, Mexican, Italian, you name it – one thing I don’t usually mess with is sushi. I think handling raw fish is a job that’s best left to the experts.
Of course, there’s always cucumber sushi, which doesn’t have any raw fish in it. But even that always seemed kind of complicated to make. You have to have special, sticky sushi rice and a mat to roll it up with so you can get the rice to shape itself around the little slices of cucumber.

But then I got this idea: why not make the sushi the other way around? Use cucumber slices to make the outside of the roll, and pack the rice and red pepper matchsticks inside?
So I tried it, and by golly, it worked! No special rice or anything – just plain white rice and peppers, tucked in a cucumber shell.
Now I can have sushi for lunch any time I feel like it, without having to pay sushi-restaurant prices. I just tuck a handful of those rolls right into a lunchbox, with some strawberries and pretzels on the side to make a complete meal.
Cucumber Sushi Lunch Box Idea
1.5 cucumbers (about 20 slices)
⅓ cup rice
¼ cup finely diced red pepper
1 cup pretzels
8 strawberries
Directions
- Using a small circle cutter, or a sharp knife, remove the center of your cucumber slices.
- Fill centers with rice and bell pepper pieces.

This is so creative. I was looking for a way to get more cucumbers into my diet. The rice could be mixed with a little chicken or tuna. This really stimulated my imagination as I’m trying to get more healthy meals into my diet. Plus great finger food for those of use who eat on the run. Kudos!!!
