Hawaiian Chicken Foil Packets
That old summer sun just keeps beating on down. It’s no time to be heating up the kitchen, so I’ve been doing a lot more experimenting with foil packet dinners – meals all wrapped up in foil and cooked over the grill.
One of the nice things about foil packets is that they make it a lot easier to grill foods with a lot of sauce, which would normally make a mess of your grill. So I decided the foil packet dinner would be the perfect way to grill Hawaiian chicken, dripping with sweet pineapple juice and soy sauce.

This dish comes together in record time. You just lay out the chicken breasts on the foil and top them with pineapple, bell pepper and onion, and then douse them with the sauce – a mixture of soy sauce, garlic, and your favorite barbecue sauce. These Hawaiian Chicken Foil Packets cook up moist and tender in just 10 to 13 minutes on the grill, and you can add just a drizzle more of the sauce before serving them.
Cooking this in foil really seals in the flavor. The tang of the barbecue sauce, the sweetness of the pineapple, and the tender crunch of the onion and bell pepper just blend together in harmony. With each juicy bite, you can almost hear the ukuleles playing in the background.
Hawaiian Chicken Foil Packets
(serves 2, feel free to double or triple!)
Ingredients
2 chicken breasts
1 cup bbq sauce (your favorite)
1 can pineapple slices, drained
1 teaspoon soy sauce
2 teaspoon garlic minced
1 sweet bell pepper, chopped
¼ onion, sliced
salt and pepper to taste
Directions
- Preheat the grill to medium or 350 degrees F. In two thin (or 1 heavy) sheets of aluminum foil, place 1 chicken breast each and season with salt and pepper. Place 2 – 3 pineapple slices on top of each chicken breast. Divide and top pineapple slices with the onion and sweet pepper.
- In a bowl, combine the bbq sauce, soy sauce, and garlic.
- Pour the sauce evenly over both foil packets, but reserve ¼ cup and set aside.
- Seal the contents of the foil packets and place on the grill. Grill the packets for 10 – 13 minutes or until the chicken is cooked through. Flip the packets halfway through grilling.
- When cooking time is up, open the packets and drizzle in the rest of the sauce remaining.

oh my this sounds delish!? Think I’m gonna have to make this tonite since I have all ingredients on hand! Love that!! Just curious the pineapple juice itself is not needed, correct? You can mix in a little with your bbq sauce if you like a sweeter sauce, but it is not needed 🙂

Do you have to use thin chicken breast or beat a thick chicken breast down?
Thinner chicken breasts will cook faster, so if you are very thick ones and are worried about the cooking time, I would beat them down, or butterfly them.
Have you ever cooked this over/in the fire coals while camping?? Just curious – how long you estimate that cook time for?
